這個「作zaku 奏乃智」是精米步合50%，和使用協會14號酵母，是「穗乃智」（精米步合60%，同樣酵母）的高級版。
除了吟釀香和果實味，還能感受到淡淡的米香。
清水清三郎商店設定較低生產量、米總重量600kg至800kg左右。這樣的釀造方法更能觀察酒的變化、因此能造高出品質的酒。當然要花更多時間、不適合大量生產。可是這種規模的生產、易於觀察醗酵桶內麹及蒸米的状態或酵母的發酵進行情況。不止是大吟醸、所有種類的酒皆是以同樣的方式釀造。
而且一般來說、只在冬天造酒、現在一年四季都有在造酒。不計成本優化設備、而冷却設備則是採用可管理溫度較小型的、約一星期為一個造酒周期、這就是清水清三郎商店的造酒之道。
